This Mortadella is our take on this Italian classic luncheon meat. We have used a mixture of pork and beef in the base emulsion mix. The beef is grass-fed organic beef from Fowlescombe Farm and the Pork from Dingley dell. The spices are all organic and include a mix of white pepper, caraway, garlic and mace.
We use only organic Standard levels of nitrite which are very low between 75 and 100 parts per million. The Mortadella slices slice like silk and is perfect for classic panino or toasted in sourdough with good tomatoes and burrata.
