Pevensey Blue
A creamy, Gorgonzola-like blue, the flavour of which deepens and sweetens as it matures until it is reminiscent of hazelnut chocolate: milky and sweet but with a pleasantly nutty bite and a picante character.
There may be mottling/discolouration in the paste of the cheese as it ripens. This does not affect the flavour.
Made by Hazel and Martin Tkalez, this new cheese by The Pevensey Cheese Company made in East Sussex. The milk comes from a local organic dairy herd that grazes the Sussex Wildlife Trust marshland of the Pevensey Levels – hence the name and the name of the cheese- Pevensey Blue. Pasteurised and Non Vegetarian.
