Our Calcot Farm Beef Bresaola is made from locally sourced beef, cured in a delicate combination of herbs and spices then hung for several months to slowly air dry to a silky texture. British charcuterie at its best.

Bresaola is traditionally an Italian air-dried beef delicacy that originates from the Lombardy region. It is made from lean, high-quality cuts of beef, typically eye of round or top round, which are seasoned with a blend of salt, herbs, and spices. The beef bresaola is then air-dried and cured for several weeks, resulting in a rich, deep flavor and a tender, velvety texture.

Charcuterie Care

All of our charcuterie is made in small batches by artisan producers. This does mean that sometimes the product may look or taste a bit different. You may also experience a white mould developing on the outside of the product, this is friendly bacteria that our producers have introduced, as long as it's white it'll be alright. Our beef bresaola can be slightly moist but don't worry it's great to eat.

Delivery Advice

Our charcuterie will always arrive with a minimum of 14 days of shelf life but most will last a lot longer. We hand-pick our charcuterie to arrive in peak condition so if you are planning on buying early then please consider using our delivery date picker on checkout.
