 South Downs Fennel Salami

Our unique South Downs fennel salami is made by David over at Calcot Farm in Sussex.

The salami is a large-format charcuterie made with fennel seeds, spices and local pork from the South Downs, one of our bestsellers and a staple on our list for the last 8 years.

As in all fennel salami, the fennel seeds are mixed with ground pork, along with other spices, such as garlic, salt and pepper to create a seasoned mixture.

This mixture is then stuffed into casings and allowed to ferment and dry, which contributes to the curing process that gives our fennel salami its characteristic flavour and texture.

Fennel salami has its origins deeply rooted in Italian culinary traditions. This flavorful cured meat is characterized by the prominent use of fennel seeds, which impart a distinct aromatic and slightly sweet taste to the fennel salami.

Charcuterie Care

All of our charcuterie is made in small batches by artisan producers. This means that sometimes the product looks or tastes different. You may also experience a white mould developing on the outside of the product, this is friendly bacteria that our producers have introduced, as long as it's white it'll be alright.

Delivery Advice

Our charcuterie will always arrive with a minimum of 14 days of shelf life but most will last much longer. We hand-pick our charcuterie to arrive in peak condition so if you are planning on buying early then please consider using our delivery date picker on checkout.
