An award-winning salami made with heritage breed pork, telicherry pepper, mace & nigella seeds. Tom Whitaker and Dhruv Baker spent years researching the best breeds and finally settled on the large black for its great flavor and optimal fat to meat ratio. They based this salami on an Indian pickling spice mix, it's delicate enough to let the porky meat shine through. Well deserved gold medal winners.
